Chicken Salad

Add a little zip to a refreshing salad.


Ingredients:

4 or 5 boneless skinned chicken breasts 

3 scallions, including greens, diced 

½ red bell pepper, seeded and diced 

½ cup celery, minced 

½ cup golden raisins

½ cup Bartlett pear, diced

½ cup Pear Chipotle Grill Sauce 

1 tablespoon mayonnaise 

Salt & Pepper to taste 

Toasted chopped pecans


Directions:

Bake chicken until cooked. Cool and cut into 1/4 inch cubes. 

Combine all of the above ingredients. Add salt and pepper to taste. 


Serving suggestions:

Serve with toasted pita wedges or on top of cucumber rounds.
Hollow out tomatoes and fill with chicken salad. Line a chilled plate with butter lettuce and serve on top of lettuce.
