Roasted Pork Tenderloin with Balsamic Pear Fig Glaze and Goat Cheese

Ingredients:

Non-Stick Cooking Spray
1 to 1 ½ Pound Pork Tenderloin
½ Teaspoon Salt
¼ Teaspoon Pepper
½ Cup A Perfect Pear –Pear Fig Jam
2 Tablespoons A Perfect Pear- Pear Balsamic Vinegar
1/2 Cup Goat Cheese Crumbles
¼ Cup Toasted Walnuts, Coarsely Chopped
1 Tablespoon Chopped Fresh Parsley
Fresh Pear Slice, For Garnish

 

 


Directions: 

Preheat oven to 375 degrees.  Spray a shallow baking pan with cooking spray.  Sprinkle pork tenderloin with salt and pepper.  Place in oven and roast 20 minutes.  Meanwhile, Combine A Perfect Pear –Pear Fig Jam and A Perfect Pear- Pear Balsamic Vinegar in a small saucepan over medium heat and stir until jam is melted and combined with vinegar.

After port has roasted 20 minutes, spoon sauce over meat and continue to bake for 5-7 minutes or until done and temperature on a meat thermometer registers 160 degrees when inserted into the thickest part of the tenderloin.

When pork is done, remove from oven and cut into 1 inch rounds and place on serving plate.  Spoon any sauce from pan onto port, sprinkle with goat cheese, walnuts and parsley.  Garnish plate as desired with pear slices.  Serve immediately.
